Coconut Oil Roasted Sweet Potatoes for Thanksgiving

Looking for an easy recipe to make for Thanksgiving that uses your new Carrington Farms coconut oil? In this easy roasted sweet potato side dish, coconut oil deepens the natural caramelized flavor of roasted sweet potatoes, and it adds a delicate subtle coconut flavor. Brown sugar and nutmeg sweeten the dish.

Ingredients

Directions

1. Peel the sweet potatoes and cut them into ½ inch chunks.

2. Preheat oven to 350°F. In a skillet, melt the coconut oil over low heat.

3. When coconut oil is melted transfer it to a large bowl with the sweet potatoes and other ingredients to toss together.

4. Spread the sweet potatoes evenly on a large baking sheet. Roast, tossing occasionally until soft and caramelized for about 1 hour.

Ingredients
  • 2 cups of full fat coconut milk (use the milk thats in the can, do not use the coconut water portion)
  • ½ cup of Carrington Farms chia seeds
  • ½ cup of dutch processed cocoa powder
  • 1 teaspoon of vanilla extract
  • ½ teaspoon of ground cinnamon
  • 9 whole dates (dried and pitted)
  • optional toppings: fresh raspberries, sliced almonds, bananas, strawberries, shaved dark chocolate
Instructions
  1. In a large bowl, add coconut milk and chia seeds. Whisk until combined.
  2. Next add the cocoa powder, vanilla extract, ground cinnamon, and whole dates. Mix until slightly combined.
  3. Cover bowl securely and place in the refrigerator for at least 4 hours. (it is better if you let it sit overnight)
  4. Remove pudding from refrigerator and spoon into blender. Puree until smooth.
  5. Top with fresh fruit, almonds, or shaved dark chocolate.
Notes
If your pudding comes out to liquidy you can add more chia seeds to thicken it up, if it is too hard just add more coconut milk or almond milk to thin it out.

Ingredients

Directions

  1. Mix together meat, onion, garlic, flax and bread crumbs.
  2. Lightly beat water and egg together and add to mixture. Add mustard, salt and pepper.
  3. Cook on a grill or stove top until no pink remains (~12 mins)
  4. Optional cheeseburgers: top with slice of your choice of cheese at end of cooking and grill or broil for about 1 min.
  5. Put burger on bun and Enjoy!

Makes 4 -3/4 inch thick patties or 6 -1/2 inch thick patties.

1. Oil grill with 1 tbsp coconut oil
2. Heat grill
3. Coat each fillet with coconut oil and garlic powder and pepper to taste
4. Grill Salmon approx 5 – 7 minutes per side to taste.

Alternative: Use 2-3 Tbsp of Carrington Farms Garlic Flavor Coconut Cooking Oil instead of the Extra Virgin Coconut Oil. If you use this oil, remove or reduce the amount of garlic powder.

Healthy March Madness Recipes

Deborah Orlick Levy, Carrington Farms resident Nutritionist, was featured on ABC Eyewitness News Weekend making food options for March Madness parties a touch more nutritious.  Deborah states that since “summer bodies are made in the months before summer” it is important to stay on track throughout the year, and then discusses healthier options so viewers can “eat without the guilt.”

Deborah opens the segment by offering viewers a more nutritious alternative to chips and dip, and explains how to make homemade whole wheat flatbread chips.  She suggests preparing the flatbread chips with Carrington Farms Coconut Oil Cooking Spray. Deborah states that she likes Carrington Farms spray because “it is made from organic coconut oil, it’s non GMO, and it has no soy lecithin.”  Deborah suggests serving the flatbread chips with hummus or salsa for a low-cal dip alternative.
